SOUTHWEST PASTA BAKE
Southwest Pasta Bake
Ingredients:
-8 oz uncooked penny or medium tube pasta
-1 package(8 oz) fat- free cream cheese, cubed
-1/2 cup fat- free milk
-1 package (10 oz) frozen chopped spinach,thawed and squeezed dry
-1 tsp dried oregano
-1 pound lean ground beef
-2 garlic cloves,minced
-1 jar(16 oz) picante sauce
-1 can( 6 oz) tomato paste
-2 tsp chilli powder
-1 tsp ground cumin
-1 cup(4 oz) shredded reduced- fat cheddar cheese
-1 can(2-1/4 oz) sliced ripe olives,drained
-1/4 cup sliced green onions
Directions:
1) Cook pasta according to package directions.Meanwhile, in a small mixing bowl, beat cream cheese until smooth.
2) Add milk,beat until smooth.Stir in spinach and oregano; set aside.
3) In a nonstick skillet,cook beef and garlic over medium heat until meat is no longer pink; drain.
4) Stir in the picante sauce,tomato sauce,tomato paste,chilli powder and cumin; bring to a boil.
5) Reduce heat; simmer,uncovered,for 5 mins.Drain pasta; stir into meat mixture.
6)In a 13- in. by 9- in.by 2- in.baking dish coated with nonstick cooking spray,layer half of the meat mixture and all of the spinach .Top with remaining meat mixture.
7) Cover and bake at 350 degree for 30 mins.Uncover; sprinkle with cheese.Bake 5 mins longer or until cheese is melted.Sprinkle with olives and onions.
8) Let stand for 10 mins Before serving.Yield:8 servings.

1 tbsp cornstarch
1 tsp pepper
1/4 tsp cayenne pepper
1 cup water
1/2 cup reduced- sodium soy sauce
1-1/2 pounds boneless beef sirloin steak,cut into thin strips
2 tbsp canola oil
1/2 cup greenpepper
1/2 cup sweet red pepper
2 to 3 garlic cloves,minced
2 cups fresh or frozen peas,thawed and halved
2 cups sliced fresh mushrooms
Directions:
*Cook linguine according to package direction; drain.
* ln a small bowl,combine the cornstarch,pepper and cayenne .
* Stir in water and soy sauce until smooth; set aside.
* ln a large nonstick skilet or wok,stir- fry beef in hot oil for 4-5 mins or until no longer pink.
* Using a slotted spoon,remove meat and set aside.
* Add the peas and mushroom; stir- fry for 2-3 mins or until vegetables are crisp- tender.
* Stir soy sauce mixture and add to vegetables.Bring to a boil; cook and stir for 2 mins or until thickened.
*Stir in beef and linguine; heat through.Yield 6 servings.

TERIYAKI BEEF STIR,- FRY
Ingredients:
1/2 cup water
1/3 cup reduced- sodium soy sauce
1/4 cup honey
4 garlic cloves, minced
3/4 tsp ground ginger or 1 tbsp minced ginger root
1 beef flank steak(3/4 pound), cut into thin strips
2 tsp canola oil
2 cups brocoli florets
1 medium onion,chopped
1/2 cup coarsely chopped green pepper
1/2 cup coarsely chopped sweet red pepper
1 cup sliced fresh mushrooms
1 tsp cornstarch
Hot cooked brown rice,optional
DIRECTION:
(1) In a bowl,mix the five ingredients.pour 1/2 cup into a resealable plastic bag; add beef.Seal bag; turn to coat,refrigerated for 1hr. Refrigerate remaining marinade.
(2) Drain and discard marinade from beef.In a large non- stick skillet or wok,stir- fry beef in batches in oil for 2-3 mins or until no longer pink. Remove and keep warm.
(3) Add broccoli, onion and peppers to the pan; stir- fry for 4 mins. Add mushroom; stir- fry for 1-2 mins or until vegetables are tender.
(4) Return beef to the pan.Combine cornstarch and reserved marinade until smooth; stir into beef mixture.
(5) Bring to a boil; cook and stir until thickened.
(6) Serve over boiled rice if desired.Yield: 3 servings.

APPLE PIE TARTLETS
Apple Pie Tartlets
These mouth- watering morsels are a delightful addition to a dessert buffet or snack tray. For convenience, you can prebake the shells a day or two ahead of serving.

INGREDIENTS:
-1 Sheet refrigerated pie pastry
-1 tablespoon sugar
-Dash ground cinnamon
Filling:
-2 teaspoons butter or stick margerine
-2 cups diced peeled apples
-3 tablespoon sugar or less
-3 tablespoons fat- free caramel ice cream topping
-2 tablespoons all purpose flour
-1/2 teaspoon ground cinnamon
-1/2 teaspoon lemon juice
-1/8 teaspoon salt
DIRECTIONS:
(1) Roll out pastry on a lightly floured surface; cut into twenty 2 1/2inches circles.
(2) Press onto the bottom and up the sides of miniature muffin cups coated with nonstick cooking spray.
(3) Prick pastry with a fork. Spray lightly with nonstick cooking spray.
(4) Combine sugar and cinnamon; sprinkle over pastry.
(5) Bake at 350 degree for 6-8 mins or until golden brown.
(6) Cool for 5 mins before removing from pans to wire rack.
(7) In a saucepan,melt butter. Add apples; cook and stir over medium heat for 4-5mins or until crisp tender. Stir in the sugar,caramel topping,flour,cinnamon,lemon juice and salt.
(8) Bring to a boil; cook and stir for 2 mins or until sauce is thickened and apples are tender.
- Cool for 5 mins,spoon into tart shells. Yield:10 servings.

DIRECTIONS:
1) Removed stems from mushroom,set caps aside.
2) Chop stems,reserving 1/3 cup( discard remaining stems or save for another use).

*1/4 teaspoon salt
*1 teaspoon ground cinnamon
*1 tablespoon water
* 1/4 cup sugar
DIRECTION
(1) Place popcorn in a large roasting pan coated with non- stick cooking spray.
(2) In a saucepan,melt butter over low heat.
(3) Add the sugar,water,cinnamon and salt; cook and stir over low heat until sugar is dissolved,

MEANING OF SUGAR CRAFT
Sugar Craft is an outcome of an act achieved with the use of fondant in different ways which includes, characters, models,flowers and other styles.
WHAT IS FONDANT?
Fondant is the mixture of icing sugar with glucose and few other ingredients that makes it to be elastic,and is usually used to cover a cake and can be bought pre- colored or you can colour it with fondant colour which comes in paste or dusts.

QUEENADOS SIMPLE FONDANT RECIPE:
Ingredients:
* Icing Sugar 1000g
* c.m.c 1tbsp
* Gelatine 1tbsp
* Glucose 2tbsp
* Water 8tbsp
* Glycerine 1tsp
DIRECTION:
(1) Sifter the icing sugar into a bowl.
(2) Add C.M.C to the icing sugar
(3) In a small stainless bowl,measure out the water
(4) Sprinkle gelatine on the water and stir with a spoon to mix.
(5) Heat up a saucepan with small quantity of water
(6) Place the stainless bowl containing gelatine mixture in the simmering water and stir till dissolved
(7) Add glucose to the stainless bowl and keep stirring till well dissolved, turn of the heat and add glycerine& stir
(8) Make a well in the centre of the icing sugar,pour in the gelatine mixture little by little mix with hand or mixer till you form a smooth palable ball of fondant.
(9) Then cover your cake with the fondant, you can use it immediately or wrap it with clingfilm.what is sugar craft?

Cake is a sweet soft baked food made from a mixture of flour,sugar, and other ingredients( such as eggs& butter,liguid and other raising agent and flavours.

THERE ARE FOUR METHODS IN CAKE MAKING
(1) Creaming Method
(2) Wet & Dry Method
(3) Rubbing Method
(4) One bowl. Method
CREAMING METHOD:
In creaming method,the butter and sugar will be creamed together till fluffy,followed by the flavours and liquid,then the dry ingredients.
WET & DRY METHOD:
In wet and dry method, all the wet ingredients like eggs,milk & flavours etc. are combined together and set aside,then all the dry ingredients are mix together very well,then rub in butter to combine,then make a well in the centre and pour in wet ingredients using turning stick to combine very well.
RUBBING METHOD:
In rubbing method,two hands are used in rubbing the cake,starting from rubbing all the dry ingredients together with hands till well combined,then adding wet ingredients little by little until every wet ingredients is combined and smooth.
ONE BOWL METHOD:
In one bowl method, all the ingredients for the cake will be measured out at once in a bowl and mixed together very well to combine with hands or cake mixer.
TOOLS YOU"II NEED TO MAKE A CAKE
An oven
Cake mixer
Kitchen scale
Sieve or sifter
Bowls
Spatula
Cake pan.
HOW TO MAKE A CAKE
(1) Cream the butter and the sugar till fluffy.
(2) Prepare your baking pan.
(3) Beat the eggs.
(4) Add the eggs to the creamed mixture.
(5) Turn on your oven to preheat.
(6) Add the ornamental ingredients(flavour touches)
(7) Add the plain flour with the baking powder and mix well.
(8) Pour the cake batter into the greased and floured pan.
(9) Bake till cake done
HOW TO BAKE CAKE WITH STOVE AND POT
* On your stove,place a stainless bowl upside down in your big pot,then place the big sized pot with cover on the stove.
* Heat the pot up for about 15-20 mins
* Put your prepare cake batter in the baking pan.
* Open the pot,place the cake tin with the batter on top of the stainless bowl in the pot.
* Cover the pot firstly with News paper and then place the pot cover to cover tightly.
NOTE: You can place a small mortar on top of the pot cover to avoid air entering inside or going out from the pot.
* Bake the cake for 45 - 1hr or until cake done very well,depending on the side of the cake.
QUEENADOS PLAIN CAKE RECIPE:
Ingredients:
* All purpose Flour 500g
* Eggs 12 pcs
*Butter 500g
*sugar 250g
*Vanilla extract 3tbsp
*squadron 1/2 cup
*baking powder 1/2 tbsp
*Liquid milk 1/2 cup
Just use the direction above on how to make a cake,and you will get a soft and palatable cake.
